This Saturday, May 14, Brunch Life at TALDE Miami Beach is back in full force with Caribbean vibes for the third installment of the monthly musically themed brunch series. This month’s brunch, Buju Brunchton Jamaican BBQ, will be the first of the series to incorporate an all you can drink option ($30 per person), because what’s a Caribbean destination without bottomless Cool Rummings Punch, Tropical Bellinis and PBR to boot?!

As for the food, guests will indulge in an all you can eat Jerk Bar ($30 per person) including jerked chicken, pork, whole fish, shrimp, curried mushrooms, rice and beans, callaloo and coconut milk roti. As usual, Dale Talde will party alongside guests and DJ Andres Amadeus, who will be spinning Caribbean and reggae tunes. The Coral Gables Business Improvement District organizes the event which this year includes thirteen restaurants. Giralda Under the Stars runs on the first Friday of every month until April. So if you missed it this time you’ll be able to catch it in December.

Each month the Italian wine dinner will showcase a four-course menu, which will be curated and prepared by the award-winning culinary team from Toscana Divino. The featured menu will be paired with ZONIN1821’s esteemed wine estates from the seven most important wine regions in Italy. This month will be a Piemonte Wine Dinner.

Our inaugural wine dinner in the “Behind the Red Curtain: An Exclusive Tour of Italy” took us to Tuscany featuring Castello D’Albola. The guests were greeted with Zonin Prosecco, delicious ciccheti and succulent affetati. The courses included dishes like Pici Pasta Senesi with Duck & Tomato Ragu and Carnaroli Risotto ai “Fungi Porcini paired with Chianti Classico, Bisteca a la Fiorentina paired with Chianti Classico Riserva.

Join us on the next stop in our tour of Italy as ZONIN 1821 and Toscana Divino highlight the Piemonte, a region rich in food and wine best-known for their Barolos and Barbarescos featuring a carefully curated menu perfectly paired with wines from Castelo del Poggio. The menu will include locally inspired plates such as Crispy Veal Tendon, Leek Agnolotti with Truffles, Barolo Braised Beef and Gianduja Cake.

Guests will enjoy casual conversation about wines with a featured sommelier, as well as wonderful raffle prizes, including free bottles of wine and other gifts sure to delight both foodies and oenophiles. The Italian wine dinner of the series will take place on Tuesday, November 10th with seating at 8 p.m. for $80 pp. Guests must be age 21 or older to participate in this event.

Hundreds of Foodies gathered in South Beach to experience one of the most important events of the 2015 gastronomic season: The South Beach Seafood Festival Chef Showdown Competition.

Twelve top chefs representing some of the best-known restaurants in the world went plate to plate at the Goya Foods Culinary Pavilion competing in six categories. The evening was presented by Land Rover of North and South Dade with Warren Henry Auto.

Michael Pirolo Makes Tortellini

This past summer, Italian cuisine master and all around bad-ass chef, Michael Pirolo, prepared a private Italian feast filled with Prosciutto di Parma for some very lucky guests.

The ham is almost as old as Italian cuisine itself with the earliest references to Prosciutto di Parma dating back all the way to Roman times around 100 BC. The ham has a very strict certification. By law it can only be produced in the gently rolling countryside surrounding the city of Parma in north central Italy. The ham must use Italian-born and bred pigs raised according to the highest standards on which they are monitored, inspected and traced.

Once the ham is ready to be cured, a highly experienced maestri salatori (aka salt master) applies a minimal amount of sea salt necessary to produce a ham with the desired savory-sweet flavor profile. This is also the reason why Prosciutto di Parma tastes less salty than other ham varieties. At the end of the curing process, every leg of Prosciutto di Parma is checked for quality and then fire branded with the five-pointed Parma Crown, signifying its guarantee of authenticity and quality.

The 3rd Annual South Beach Seafood Festival recently announced the 2015 line-up for the Chef Showdown competitors at the Dream Hotel in South Beach.

More than twelve world-renowned chefs will take place in the competition. The Showdown competitions include:

It is five minutes before noon on a on a hot and humid Saturday and while storm clouds are looming to the west, Gace Della is standing at the entrance of the Wynnwood Walls talking to a tourist-looking gentleman. She is easy to spot, she is dressed all in black and wearing a Miami Culinary Tours sign. I tell her who I am and she tells me to wait by the elephant mural “…we will start exactly at 12:00…almost everyone is here”.

“Everyone” is an eclectic group of South Florida bloggers (from foodies to lifestyle, fashion, beauty and everything in between) gathered by Paola Mendez, creator of the South Florida Bloggers Meetup Group and invited to experience the Wynwwod Tour edition of Miami Culinary Tours.

At 12:00:49 P.M. Grace Della begins the tour. Her passion and depth of knowledge immediately come to the forefront. Her delivery is fast, articulate and enthusiastic. She prepares us for our first stop on the tour: Wynwood Kitchen & Bar.

Wynwood Kitchen & Bar has outdoor seating but it is 92 degrees outside with like 90% humidity and on top of that it looks like a storm is coming. We opt to sit indoors. Wise choice, it is cool and comfortable, they have a large table set up for us and a great IPA beer at each spot waiting to be sampled. They read my mind.

Grace explains about Executive Chef Miguel Aguilar’s Nuevo Cuisine philosophy and goes on to describe what’s in our plate: Chicken Empanada, Cheese Tequeño and Sweet Plantains with Queso Fresco. Very well prepared and exquisitely interpreted Latin street food. An excellent appetizer, it gets me in the right mood. By this time I was ready to keep on eating but there is an art component to the Wynwood Tour and since the menacing storm has not fully materialized we head to the Walls.

I did mention Grace’s knowledge about the art on the Wynwood Walls but it is her passionate delivery that makes it so exciting to hear about the artists and creators behind the art. I must confess that until that moment I had taken the art on the walls for granted. No more.

After a brief visit through the O. Asciano Art Gallery we are in route to our next stop: The R House.

The R House is either a cool restaurant with great art hanging on the walls or an art gallery with a restaurant inside, either way they serve an excellent red wine and Chef Rocco Carulli’s Short Rib Slider and Tuna Tartare are simply off the charts.

The Short Rib slider is braised in a decaffeinated coffee rub, sautéed in a molasses reduction with hot chilli and then put into a brioche bun. If by now you are thinking: “that sounds good”, it is.

The Tuna Tartare is lightly fried in sesame oil with black and white sesame seeds, a sweet chilli glaze and wasabi cream go on top and it all goes atop a fried wonton crisp. Each dish is great by itself but to taste them together is simply sublime. I could stay here but the tour must go on.

Two very long, humid and hot city blocks later we arrive at Pride and Joy, a barbecue joint.

Pulled Pork Texas Toast with Cole Slaw is served on a simple cardboard tray but as simple as it sounds, it is every bit as good as good can get, they have a variety of sauces to enhance the flavor and the pork is moist and soft. If you are on the mood for barbecue, this is the place.

From Pride and Joy we go across the street to SuViche a sushi, ceviche and pisco bar/restaurant.

At SuViche they serve us ceviche (of course), the traditional Peruvian dish. Each dish at SuViche is prepared individually so some patience is required but the freshness and awesome taste is evident on the plate. If you haven’t had ceviche before this is a good place to try it.

Next stop is Made in Italy Gourmet, a combination restaurant, deli and market. It boasts a spacious locale with high ceilings and very interesting décor. Whether by coincidence or design (probably the latter) they serve prosecco and Pecorino al Tartufo which is an Italian, raw, sheep’s milk cheese encrusted with small specks of white and black truffles. It is awesome and it gets us in the right mood for our last stop.

Ah yes!…dessert!… Fireman Derek’s Bake Shop & Café, almost across the street from Made in Italy Gourmet specializes in key lime pie and that is exactly what we get to sample. I can taste each ingredient: the limes, the condensed milk and the graham cracker crust as well as the congruence of all these ingredients, which makes this uniquely Florida dessert such a perennial favorite. You want to stop here.

I would advise to take the Wynwood Tour during the cooler months of November through April. If you consider yourself a foodie, the Wynwood Tour is a must but even if you don’t, it is definitely worth it.

It was a standing room only for the more than one hundred and fifty people who attended the opening of OBBA Sushi in Coral Gables this past Friday.

The Honorable Jim Cason, Mayor of Coral Gables presided over the cutting of the ribbon together with OBBA Sushi owners Walter Zapata and Tufic Akil. The Mayor also awarded Zapata and Akil with a Seal to City of Coral Gables based on their entrepreneurial achievements.

Once the ribbon was cut the sound of Taiko welcomed guests into the serene and well appointed dining rooms. The sushi creations coming out of the sushi bar were being consumed as soon as they were being put into the trays and the Sapporo kept flowing to the satisfaction of everyone. Definitely a great opening night!

This year, the bloggers started the crawl by getting together at BULLA GASTROBAR , winner of the 2015 Taste of the Gables Award.

Bulla Gastrobar welcomed us with a choice of white or red Sangrias both of which were full of fruit flavor, talk about the perfect refreshment on a hot Florida June afternoon.

Salpicón de Mariscos: Grilled octopus, jumbo lump crab meat, shrimp, bell peppers, fresh lemon, oregano and olive oil. This combination of seafood flavors was simply amazing!

Huevos Bulla: Homemade potato chips, Serrano ham and potato foam drizzled with truffle oil. These eggs were just the perfect appetizer.

Bulla Sliders: Homemade garlic herb bread, beef, pork, veal, oyster mushroom patties, piquillo peppers, caramelized onions, crimini port reduction, tetilla cheese, and Portobello fries. This is actually a James Beard Foundation Burger and winner of The Taste of the Gables Award…need we say more?

By this time we were all excited and ready to continue.

Next stop on the list: BRICKTOPS right across the street.

Field Greens Salad: Mixed baby greens, tomatoes, carrots, onions, mushrooms and focaccia croutons with a homemade house vinaigrette.

Hearts of Romaine Caesar: Hearts of Romaine lettuce with grated parmesan and focaccia croutons with homemade Caesar dressing.

The Wedge Salad: Bib lettuce, thick cut bacon, red onion and blue cheese.

Parmesan Crusted Chicken: Pan sautéed chicken, chopped tomato, capers and lemon beurre blanc

Scottish Salmon: Salmon lightly seasoned and simply grilled. So simple and yet so good!

Prime Sirloin Meat Loaf : Meat loaf made from prime sirloin and topped with a chili sauce glaze. Quite possibly the best meat loaf we’ve ever tasted.

Baby Back Ribs: Danish Baby Back Ribs topped with chipotle barbecue sauce. The ten hour slow cooked process is evident in the meat fall off the bone/melt in your mouth texture.

They served a wonderful sushi sampler consisting of:

Crispy Canapés: Crispy rice with steamed shrimp, cilantro, scallions, sun-dried tomatoes, spicy mayo and Yuzu Oil dressing.

Yellowtail Guacamole Tartar: Yellowtail, masago, avocado, shizo, sesame, sriracha, micro greens, cucumber and ginger Yuzu.

Obba Sandwich: Shrimp tempura, spicy crab salad, avocado and chives with spicy katzu mayo.

Banana Tempura: Batter fried banana.
Then it was on to BOOKS & BOOKS CAFE where they treated us to a delicious

Shrimp Avocado Tartine: Fresh shrimp, avocado, tomato, basil pesto, garlic aioli on grilled Ciabatta. We washed down with a great-bodied Uintaite BaBa Black Lager.

Our last stop was LA TABERNA GIRALDA, a quaint Spanish style tavern. The offerings:

Croquetas Cabrales: Cabrales cheese croquettes.

Chips de Berenjenas y Miel: Eggplant Chips sprinkled with honey.

Perfecto de Solomillo de Cerdo: Roasted pork tenderloin with caramelized onion and aroma of rosemary.

It was a perfect ending to a perfect evening.

The three “breath-taking,” garlic-infused appetizers priced at just $4.19 include the Bruschetta, flaky Italian bread topped with chopped vine ripened tomatoes, sweet basil and garlic (orig. $9.95); Calamaretti Fritti, crispy calamari fried in a mixture of authentic Italian bread crumbs and robust roasted garlic (orig. $12.95); and Spinach Sautee, tender baby spinach sautéed in zesty garlic served over hearty cannellini beans (orig. $9.95).

If the permeating smell of the restaurant’s garlic force-field isn’t enough to keep patrons safe from Dracula, repellent vampire cocktails are also available, which include the Baby Prima Martini, Dracula Red Bloody Mary, Vampire Vodka Surprise, and Chef Carlos’ favorite Pinot Noir all priced at $4.19 a glass.

Whether people love it or hate it, the health benefits of eating garlic are now universally hailed. A member of the onion family, garlic has been used throughout recorded history for both culinary and medicinal purposes such as lowering blood cholesterol levels and reducing the buildup of plaque in arteries. It has a characteristic pungent, spicy flavor that mellows and sweetens considerably with cooking.

“A little secret; 15 minutes before we open, I take a sizzling hot skillet of sautéed garlic out into the dining room and splash in some Italian white wine letting off an explosion of garlic goodness fill the air,” admits Gerry Cea, founder of his family’s business, Café Prima Pasta. “In addition to being part of our restaurant’s ambiance, the smell serves as a prelude to the handmade specialty pastas, fresh breads and desserts we prepare to order each day.”

Prior to filming Top Chef: New Orleans, Nina Compton, the Saint Lucia native and former Chef de Cuisine of Scarpetta had never been (but always wanted to go) to NOLA. While her original honeymoon plan to visit the French Quarter fell through, a different kind of passion landed her as runner up on Top Chef Season 11 and in the city she’d always yearned for. Obviously the rest is history as it’s no secret that Compton packed her knives in February in search of a Creole cooking future, which brings us to her new venture and little unknown secret: Compère Lapin.

We’ve got an exclusive on what she’ll be serving at her frst solo endeavor at the new Old No. 77 Hotel & Chandlery, and we’ve got an exclusive on what she’ll be serving up. Conch Croquettes with pickled pineapple tartar sauce, Orecchiette with pork cheeks and arugula and Banana Zeppoles with salted rum caramel. As well as her final ode to Miami: Her pasta dumpling recipe from the queen of gnocchi herself. 

Mash 5 potatoes. Add 3 egg yolks. Season with a pinch full of salt and a hand full of flour. Work the dough but not too much. It just should come together and feel soft and not breaking apart. And work it while its hot so it doesn’t get gummy. Roll it out, chop it up and cook it right away.

We’re gonna go ahead and safely say an iteration will find its way onto Compère Lapin’s menu, so should you not want to make it at home there’s always road tripping to New Orleans for a taste of the real thing.

Savor Tonight has teamed up with the newly opened Tokyo Blue to host a sake tasting on Thurs., April 16th. Open since January, this Asian-fusion restaurant combines the flavors of Japan, Thailand and Peru into it’s dishes. Veritage Miami 2015 is just a few days away and Chat Chow TV got to sit down with one of the event’s marquee cooks, Dena Marino of Design District’s MC Kitchen to find out more about her restaurant, its popular dishes and what to expect at this year’s Interactive Dinner.

Marino got her training with acclaimed chef and restauranteur Michael C out in Napa Valley after a chance meeting with him. After working in his kitchen California kitchen for 6 years, he asked her to run his concept in Aspen where she stayed for the 13 years before coming to South Florida and opening MC Kitchen — and cheer on her beloved Miami Heat.

Since opening in 2012 the restaurant has received praise across the city and the U.S., most notably making the prestigious “Top 20 Best New Restaurants of 2013” list in Esquire Magazine.

For this year’s Veritage she will be cooking alongside four other notable South Florida female chefs in the interactive dinner on Friday night, April 17, teaching a crowd of 700 how to make a signature pasta dish that she serves in the restaurant.

Last Fall, Chicago’s popular Siena Tavern opened its doors on Miami Beach in the iconic China Grill building. At the helm of the restaurant is the ever-charming Top Chef alum Fabio Viviani, who sat down with Chat Chow TV to talk all about Siena Tavern Miami location and its menu.

Viviani has been working in kitchens since he was 11 years old in his native Italy. By the time he was 28 he was the owner of five different restaurants when he decided to sell them all and come to America. Since then he has opened several successful restaurants throughout the country and has become a well-recognized and well-liked chef.

When Viviani and his partners decided bring the Siena Tavern concept to Miami, the restaurant team partnered up with local vendors like Bar Lab and Wynwood Brewing to help create the bar program. As for the menu, Viviani tells Chat Chow that he enlists his friends, family and co-workers to help narrow down the menu from 300 dishes to 35 “cravers.”

As for what deems a dish as a “craver” he notes, “we like to have the ‘wow’ kind of dishes, because if I can’t get the reaction where you want to come back for more there is some more work to do on it.”

Some of the most popular “cravers” on the menu are the house-made pastas, octopus, pizza and a meatball that’s so beloved it has it’s own Twitter account.

Taquiza has become the go-to spot for authentic tacos and late night eats on Miami Beach. Started by Eating House and Freehand Miami alum Steve Santana, it serves up tacos on house-made masa that has everyone buzzing. Chat Chow TV sat down with Santana to find out more about them and the concept behind them.

The fast casual restaurant, located on the first floor of the Eva Hotel, is a no-frills taqueria serving up seven different types of tacos to a standing-room only crowd. Santana emphasizes that everything in Taquiza is homemade right down to its masa corn tortillas, which uses corn grown in small heirloom farms sourced by Masienda. Other popular menu items include the guacamole with hand torn chips, dry rubbed beef jerky, and its take on the popular ice cream treat the choco taco.

But Santana hasn’t always been a chef — he actually began his career doing digital work, but always had a passion for food. After helping coordinate one of the first-ever Cobaya dinners, he met chef Jeremiah Bullfrog and began assisting him on his food truck. His passion grew from there and before long he left the digital world and became a chef full time.

SOBEWFF Amstel Light Burger Bash 2015

Friday night, a friend and I had the chance to attend the SOBEWFF Amstel Light Burger Bash. Of course, being allergic to sub-par beer, we decided to check out the newest brewery in Wynwood, J Wakefield Brewing for some pre-gaming. Seriously, check that place out!

And while J Wakefield had what looked to be a pretty awesome food truck outside, what it didn’t have was a Ritz-Carlton beach full of awesome chefs preparing gourmet burgers! Oh, or the hot chicks, spectacular band, celebrities (yeah, I got my picture taken with Al Roker and Morimoto!), and thousands of people.

Honestly, you can see who won here. I was a little disappointed with the star power that I and other people love to meet (though not burger quality) compared to when I went in 2013. That year, Morimoto was there but was joined by Bobby Flay, Guy Fieri, Scott Conant, Michael Symon, Geoffrey Zakarian, Andrew, Zimmern, Anne Burrell, The Sandwich King, and more.

My favorite and the one I cast my vote for was Prime One Twelve (Prime 112). That burger was so juicy and cheesy and delicious! I also enjoyed Red Robin’s burger and Shake Shack too among a handful of others.

Vagabond Restaurant and Bar soft opening in the new renovated Vagabond Hotel on Monday, January 12, 2105. The Vagabond Hotel is located in the MiMo District at 7301 Biscayne Blvd. We started out with the peanuts and chapulines with Szechuan peppercorn and lime and I could not stop eating them so yummy.  Then we had the zucchini salad with pistachio, tarragon and pipian sauce.  The heirloom tomato fattoush salad with black sesame, sheep’s milk feta and black radish.  The crispy fingerling potatoes with smoked paprika and sherry vinegar was so good. Next we tried the roasted baby carrots with mole, hazelnut, yogurt and za’atar and the sweetbread milanesa with swiss, country ham vinaigrette and mustard dill and it was delicious.   Next on the list was the iberico skirt steak and it was cooked and seasoned perfectly along with the  sweet and sour sun shrimp both were amazing.  Then we had the buttermilk fried quail. We made it to the desserts and my favorite was the pistachio cake it was so amazing it is a must try.

Corsair / Scott Conant

Chopped judge, TV personality and the man behind plenty of the country’s top restaurants, Scott Conant, is back in South Florida with his newest concept, Corsair, inside Aventura’s Turnberry Isle Hotel. Chat Chow TV sat down with the charming chef to learn more about Corsair, its inspiration and what rituals he has for his restaurants.

The welcoming restaurant located close to the property’s massive golf course plays off its maritime-inspired name with a warm palate and interior tones designed by popular designer Meyer Davis.

“It’s a celebration of sorts of this area,” Conant adds about the design.

The restaurant serves a blend of Mediterranean and local flavors to create its unique spins on dishes like a deconstructed lasagna, polenta waffles and porcini braised veal. For the beverage program he enlisted California’s Rob Floyd who has set up bar programs for the SLS in Hollywood, CA and several of Conant’s restaurants.

As for his other popular restaurant on Miami Beach, Scarpetta, that has produced some of Miami’s top chefs including Macchialina’s Mike Pirolo and Top Chef’s Nina Compton, he says they are all good friends still and enjoy getting in the kitchen together.

“It’s nice to know we can bring the band back together and play some cover songs,” Conant says with a slight laugh.

Lique Miami-A Refreshing New Waterfront Dining By Betty Alvarez

I arrived to this quaint restaurant in North Miami which I have only heard about, Lique. This waterfront dining spot is owned by restauranteurs Peter Cumplido and Alex Podolhy who are also behind Fort Lauderdale’s Sweet Nectar. This soon-to-be hot spot has Executive Chef Renalto Medeiros at the helm and I was about to embark on a never-before breathtaking dining experience in a chilly night but that did not stop me.

When I entered the restaurant I realized that I have been here before when it was Rouge Waterfront Dining where everything was red. But this time around, the restaurant is transformed into what it seems an enchanted garden with luxurious white decor furniture, greenery all over, the contemporary pieces that was all over. The decor is truly spectacularly very fresh and inviting. We sat down to our table to begin our journey.

Our dining experience was by candlelight. A nice touch for a romantic experience if you are dining with a loved one. In my case, I was dining with one of my best friends so that did not happen. LOL! I ordered a nice Pinot Grigio and she ordered a nice fruity tall glass drink that our waiter recommended. I was jealous as her glass was bigger than mine! When we were hended our menu it was unique as it was a wood platform wit the menu attached and the logo of the restaurant on the back. It was great as everything was on one page.

Appetizers and small plates is what we suggested therefore it did not disappoint. First serving was the Truffle Big Eye Tuna Carpaccio. I wanted something healthy but nice to start therefore the Tuna was a nice healthy alternative. What a delight! The truffle made the Tuna stand out as all my taste buds sky-rockted. It gave it a distinct flavor. Then came the Bone Marrow-a plate of 4 big oxtail bones filled with shredded beef with toasted bread besides each bone. A true delight to savor.

If the Bone Marrow is too much for you, the Beef Cheek Toast would be more appropriate as it has the same shredded beef on top of a toasted bread. Another real treat is the Escargot Tortellini. A plate of 4 tortellini smothered with creamy sauce with bits of bacon was the utmost satisfaction that we got. It was my first time in a long time that I tried escargot but it actually tasted like beef. Tasty and delicious!

Lastly, we just had to have dessert therefore our waiter suggested the apple pie but this was not any ordinary apple pie. This was a Desconstructed Apple Pie. The pie was served with 4 fluffy pastries on one side, cinnamon ice cream in one jar and the apple filling in another jar. One had to place all of these items in the plate. It was delish and proved that by this time we were completely full.

Other than the plates we tried, the mediterranean-style cuisine also had more selections of tapas, raw seafood, and a sushi bar. One can sit at the dock area gazing as the marine boats pass by and enjoying a nice night out under the stars. A suitable place to dine with a loved one and/or with friends. A true gem!

Threefold Cafe, Coral Gables’ newest all-day breakfast spot, serves up a unique combination of Australian dishes with a Florida twist. Opened this Summer by two Melbourne transplants, Teresa and Nick Sharp, they offers diners a taste of their native Australia dining philosophy with fresh local food. The pair relocated to Coral Gables after Nick was transferred for work. Missing Melbourne’s “off the charts” coffee the duo decided to open Threefold Cafe. Pomona College celebrated Partnership with Posse Foundation By Betty Alvarez

Pomona College, a nationally renowned liberal arts college celebrated its expanded partnership with The Posse Foundation to provide 10 full-tuition scholarships to Miami-area high school seniors who are interested in STEM studies and careers. A cocktail reception was held at Tuyo restaurant located on the Miami Dade College Wolfson Campus which was attended by educational leaders in Miami Dade County.

“We are happy to be partnering with The Posse Foundation in Miami for the first time. We know this is going to be a successful program for the students selected. This model provides not only placing them in supportive, multicultural teams, but also offers them small class sizes and easy access to faculty, which results in more opportunities for research and mentorship,” said David Oxtoby, president of Pomona College.

Batch Gastropub: New Fall Menu Excites by Betty Alvarez

The first time I’ve been to Batch Gastropub was to celebrate my friend’s birthday party. When I first went in, I was amazed about how casual but comfortable the restaurant is. It’s a gastropub where the menu was approachable and there was an expansive drink list. We celebrated during their happy hour and the placed got packed as soon as I got there. My girlfriends and I indulged in their wonderful happy hour menu and their regular menu. A memorable time for all!

This time around, I got the opportunity to preview their Autumn menu which I was excited to taste. I could not wait for the delectable surprises that this place that had brought my tastebuds into action.

First of all, I was greeted with a cornucopia of cocktail samplings. The one that stood out is the Green Pepper Mojito as I thought it was going to be super sweet but to my surprise it wasn’t. I could taste the green pepper flavor in my mouth but it was not overwhelming to sour my taste of the food that I was about to sample.

Batch gave us two types of menus to choose from for our tasting one that had the house made meatballs or the General Tso’s Cauliflower dish as the starter.

We began with a snack: Salmon Crudo comprised with the House Cured Faroe Island Salmon on top of Florida peaches with Truffled vinaigrette and maldon salt. This small snack was a different experience as I never tasted a salmon on top of a slice of peach before. The salmon taste came to my tastebuds first and then complimented it with the sweet peach infusing both into a nice sweet and delectable light bite.

Then came the starters, the house made meatballs of duck, short rib and pork belly on a sweet potato puree and Serrano ham gave me great delight. The meatballs were warm, soft to chew and the sweet potato puree gave it a good additive to my palate.

The next starter was the Tuna Poke-Peanut Butter “Crumble”, wonton, scallion, and crispy ginger. Although I did not taste the peanut butter but the scallion and the crispy ginger is what stood out of my mind. It was delicious.

For the veggies part, a Batch Kale Salad was served. Now I never had Kale in my life so I was delighted and nervous at the same time in trying this salad comprised of raw kale, hearts of palm, peanuts, strawberry vinaigrette, and parmesan. To my surprise, I loved it. The kale was not overpowering and the vinaigrette made everything come together. Definitely will have to try that salad again next time I go to Batch Gastropub.

Now the main course: The Drunken Short Rib which is a whiskey braised short rib with Vanilla and Sour Mash, Creamy polenta and Cinammon roasted carrots on the side. The meat was so tender that it was falling out of the bone. I could taste the whisky a bit but my memory was the warm, soft, juicy meat that these ribs had. Other than the cinnamon that covered the carrots it was also mixed with a coffee flavored sauce which had a distinctive taste.

The sweets that culminated our experience is the Carnival Donuts-fried dough, powdered sugar, with a warm chocolate ganache and Kahlua syrup. Now these round donuts were the best and my favorite was dumping it in the Kahlua syrup rather than the chocolate ganache. It was so taste was so much richer to my palate.
A very sweet experience to end this preview tasting.

All in all, I can’t wait for this autumn menu to be announced to the general public as Batch Gastropub wants to exemplify the farm to table concept as it is healthier option for everyone but with full of taste. Kudos to Batch Gastropub!

The 13th Annual Miami Spice Restaurant program kicks off in just a few weeks on August 1. This year to celebrate, the Greater Miami Convention & Visitors Bureau (GMCVB) launched a series of special of monthly Miami Spice Mash-Ups, where chefs collaborate for a one-night only dinner and prepare dishes from their upcoming Spice menus.

On Wednesday, June 25, J&G Grill at St. Regis Bal Harbour Resort kicked off the series with its Chef de Cusine Brad Kilgore and pastry chef Antonio Bachour creating a six-course menu with visiting Chef Jose Mendin of the Pubbelly family of restaurants.

The intimate dinner showcased the creativity of these chefs with dishes such as Local Poussin, “Saucisson de Lyon,” Five Spice, Chard Walnut Emulsion from Kilgore, Pork Cheeks, Asparagus, Mushroom Dirt, Parmesan Cheese and Pickled Mushrooms from Mendin; and Salted Honey Yogurt, Candied Tomatoes, Greek Yogurt Custard, Strawberries, and Yogurt Sponge Cake from Bachour. Guests also enjoyed cocktails from Botran Rum and beers from Stella Artois.

Philip McDaniel / St. Augustine Distiller

Florida is having a spirits renaissance thanks in part to the St. Augustine Distillery. Chat Chow TV sat down the distillery’s president and founding partner Philip McDaniel to found out more about the new craft distillery, its historic location and how it is stepping up St. Augustine’s “cool” factor.

The distillery is the brain child of McDaniel and his fellow founding partner Ryan Dettra who were looking for new projects to take on in their adopted hometown of St. Augustine. They were intrigued by the idea of bringing a distillery to the area and went around the country researching and discovering the best practices on how to do so.

They partnered up with Master Distiller David Pickerell, who has more than 30 years of experience in the distillery industry under his belt with brands like Maker’s Mark, and used some of Florida’s abundant produce like sugarcane, corn and wheat, to create their spirits. The first one created was vodka, followed by the recently released gin along with rum that will be coming in early 2015. Bourbon is also in production and once released will be Florida’s first bourbon.

The distillery is housed in the historic FP&L Ice Plant right in the heart of the historic St. Augustine beach area. It is easily accessible by trolley and tour buses and provides free tours daily where guests can learn more about the plant, its process, sample some product and purchase it if so desired.

Miami Culinary Tours: Wynwood Food and Art Tour

Recently, the Business Improvement District of Coral Gables invited Miami food bloggers to participate in a crawl of some of the restaurants participating in the hugely successful Coral Gables Restaurant Week, now in its seventh year.
The evening began with all the bloggers, more than sixteen of us, meeting at Swine Southern Table and Bar. There, we got to sample two of their signature drinks, the Swine Old-Fashioned: Bacon washed old overholt rye, maple syrup, house-made swine bitters and an Old Cuban: Eigth year old Bacardi, mint, lime, Delamotte  Champagne and angostura bitters. During cocktails they brought out the appetizer: Deviled Crab Hush Puppies with pickled celery and smoked trout roe. These Puppies were so full of flavor, I could’ve happily stay there just eating them the whole evening but, the best was yet to come, as an entrée we had the Smoked Brisket Steak covered with a delicious molasses glaze accompanied by stoneground grits, pickled corn and cheddar relish. This brisket was crisp on the outside and so moist on the inside, the meat just melted to the taste. I’ll be dreaming about it until I get back to Swine!
We had to move on…our next stop was Talavera Cocina Mexicana where they extended out the red carpet for us in typical Mexican hospitality fashion.
At Talavera Mexican Cuisine, the welcome cocktail was Pueblito Viejo: Corzo Reposado tequila, lemon juice, simple syrup, sugar, crushed mint served over ice. It is refreshingly sweet and goes down so easy!. The menu featured an appetizer consisting of Gordita Conchinita Pibil: (pulled pork) in a corn masa tortilla with a dry rub of chiles and spices. The taste of toasted corn of the tortillas combined with the flavor of the tender piglet was so pleasing to the taste buds, add to that the hint of chiles and you have the perfect appetizer.
Next were Enchilada Suizas: pulled white meat chicken inside a corn tortilla with poblano cream sauce and tomatillo salsa, topped with Oaxaca cheese and baked, served with crema Mexicana and cilantro. Hot, chewy, soft and delcious!
The second entree was Camarones al Ajillo: sautéed shrimp in a garlic sauce with dried guajillo chiles served with rice and watercress. The shrimp were so fresh and they had just the right touch of garlic. The rice complemented the dish so very well.
For dessert it was Crepas de Cajeta: crepes covered in Cajeta served with walnuts and vanilla ice cream. If you haven’t had this dessert I urge to go to Talavera and try it. You’ll thank me later.
The portions at Talavera were very generous and we were beginning to exhibit signs of food exhaustion but we marched on…
The next one up was Divino Ceviche where they welcomed us with a that typical Peruvian drink known as the Pisco Sour: Pisco, lemon juice, sugar and  angostura bitters topped with a frothy egg white meringue sprinkled with cinnamon…ooh so good…! there were Camote (Sweet Potato) Chips ready to be dipped in Aji Amarillo or Salsa de Huacatay accompanied by Canchas (Roasted Corn).
The hot appetizer consisted of Pulpo (Octopus) in Salsa Anticuchera. The octopus was lightly crunchy with a very pleasing smoky flavor.  For entree we were served the Trio de Ceviches consisting of Ceviche Tradicional,  Ceviche Divino (the Chef’s specialty) and Ceviche al Olivo. These Ceviches are made with slices of fresh fish and or whole shrimp marinated lightly in lime juice and seasoned with Peruvian limo chili, fresh cilantro and onion; garnished with sweet potato and choclo (Peruvian giant corn), the Ceviche Divino also has mango and avocado. The ceviche is so good that one of the bloggers proclaimed “the best ceviche she had ever had”, I concur.
For dessert, Mousse de Maracuyá (Passion Fruit) and Mousse de Chirimoya (Custard Apple). These are delicate mousses with a refreshing tropical flavor.
From Divino Ceviche we were on to Tarpon Bend for a glass of prosecco and to sample their Braised Short Rib. These ribs are braised for four hours and they are all flavor.
Finally we ended the crawl at Cibo Wine Bar where they started with a wonderfully soft and fresh Burrata and robust yet light Prosciutto di Parma, followed by Arancini: Rice balls stuffed with ragu and melted mozzarella.
The Grilled Whole Octopus with mixed greens, diced tomatoes drizzled with extra virgin olive oil and lemon juice was amazing!
The Pappardelle with slow cooked lamb ragu covered with pecorino shavings was so delicate and yet robust that it didn’t matter how full I was, I still wanted more.
As if all that wasn’t enough they brought out a Black Tiger Shrimp in a wine garlic tomato sauce that was simply out of this world.
After an incredible twelve different courses, three dessert and five different drinks we were all exhausted, happy and ready to go home. It was an incredible experience!

Josh Capon / Lure Fishbar

With ocean views, a celebrity chef and the freshest seafood available, Lure Fishbar inside the Loews Miami Beach Hotel has quickly gained a large following since its opening in December 2013. Chat Chow TV sat down with Josh Capon, the Executive Chef and partner, to learn more about Lure, how it stacks up to the NYC outpost and what he has in store for Miami.

Lure Fishbar has been an institution in NYC for more than 10 years — it’s so popular in fact that their was a social media outcry when rumors circulated that it may be closing. While the original outpost is still very much in business, the owner of the Lowes had been a big fan of the restaurant and convinced Capon and his team to come down to Miami.

“We thought the space, the timing and location was perfect,” notes Capon. “And I think we’ve created something really special here.”

While the restaurant’s menu has many similarities to its NYC sister location, such as fresh seafood towers, sushi and its famous Bash Burger, the menu also features unique dishes that showcase European and Latin flavors like Seared Diver Sea Scallops with Steamed Clams and Chorizo and Steamed Red Snapper with served Veracruz style.

Heading up the bar program is bartending veteran Robert Ferrara, who has created a menu featuring creative cocktails filled with fresh ingredients that are perfect for its Miami Beach setting. Capon himself is a big fan.

“He’s constantly coming up with new, inventive seasonal cocktails that blow people away,” adds Capon. “He’s a huge talent, an absolute pleasure, and we’re very lucky to have him.”

Capon has plenty of exciting projects in the works, most notably his new half hour food competition show titled “Frankenfood” which just began to air on Spike TV this month.

Taste of the Gables was back in a big way this past Thursday to kick off “Coral Gables Restaurant Week” at the Westin Colonnade. More than 20 Coral Gables Restaurant Week newcomers and veterans (among them previously reviewed in this column: Ikura Sushi Lounge, La Talavera and Divino Ceviche) prepared their best dishes and battled to be voted “Best Taste of the Gables”, the winning vote went to Uvaggio, 70 Miracle Mile. The event was presented by Bacardi USA Inc., there was plenty of food, drinks and activities, absolutely no one left with an empty stomach!

La Tagiatella…by the time you finish reading the name, as you enter through the glass doors, you have already stepped a few centuries back in time into a beautiful northern Italian castle.
The decor is simply breathtaking. Nothing has been overlooked in La Tagliatella’s rococo inspired interior. There is so much to see here that you could spend several days just discovering new details…
and then…there’s the food…
But before we get to that, keep in mind that La Tagliatella is part of a worldwide chain of more than one hundred and fifty restaurants. It doesn’t take a genius to figure out that they must be doing something right…and that…of course…is the food…
The Handcrafted Meatballs, made with their own home-made sausage and beef, seasoned with garlic, oregano, parsley and Parmesan cheese were juicy and cooked to perfection. They came with spicy Napoletano and pesto rosse panna sauce.
The Arancini, which are risotto balls, filled with mozzarella cheese, breaded and deep fried to resemble small oranges (hence the name) were crisp with a light crunchy exterior. They were complemented with a spicy tomato sauce.
Mozzarella Carpaccio, consisted of imported Italian buffalo mozzarella sliced on top of crushed tomato with fresh anchovies, olive paste and fresh basil. Now for those of you who are staunch anti-anchovies militants, I would strongly advise to try this Carpaccio, the buffalo mozzarella’s soft, moist, somewhat granular, semi-elastic texture and its mild yet slightly sour taste combine to give the fresh anchovies a delicate, natural flavor which will take your eating experience into the fifth taste (beyond salty, sweet, sour and bitter), the one called “umami”. Try it, you won’t regret it.
Now, in a place called “the noodle” you know the pasta is going to be outstanding. The Pappardelle with Parmigiano and Truffle which are wide egg noodles, sautéed with truffle sauce, Parmesan cheese, topped with fried egg and black caviar did not dissapoint.
Branzino alla Mugnaia is Mediterranean sea bass, cooked with a lemon butter asparagus sauce. Served with roasted potatoes, grilled asparagus and arugula salad. This sea bass had a perfect flaky, buttery texture and a delicate well seasoned taste.
To finish an incredible meal, the Bocconcino, a fresh cheese cake with custard and the Tre Bombe al Cioccolato, a trio of chocolate and hazelnut semifreddo with chocolate sauce, were the perfect sonata.

#NegroniWeek 2014

Negroni WeekAt Chat Chow TV, we are big fans of the Negroni. We are even bigger fans of giving back to the community while drinking a Negroni — and during Negroni Week (June 2 – 8, 2014) everyone will have the opportunity to do both.

For Negroni Week, more than ten different restaurants and bars around Miami, and hundreds more around the country, will feature a Negroni Week special. A portion of the proceeds from each sale of the Negroni during that week will go to the charity of the venue’s choosing.

But the it doesn’t stop there. If you check in via social media using the hashtag #NegroniWeek, Campari will donate an additional $1 per mention, up to $10,000, to charity. Plus the bar or restaurant that has the most #NegroniWeek mentions at the end of the promotion will get another $10,000 donated to their designated charity.

Heath Porter / Uvaggio

Tucked away on Coral Gables’ Miracle Mile is the new wine bar and restaurant Uvaggio. The cozy spot has garnered a lot of buzz because of its unique approach to wine and dining. Chat Chow TV sat down with Uvaggio’s Head Wine-O Heath Porter to learn more about the restaurant and its interesting take on the wine scene.

Uvaggio is part dining experience and part wine bar, carrying around 700 different bottles of wine, by 120 different labels, and prides itself on carrying uncommon wine varieties.

“Seems like everybody else wants to carry a lot of the same things, and that’s awesome if people want to go there and drink that,” Porter notes. “But I’d rather come here and try something I don’t drink sitting on my couch every night.”

The extensive wine program also features high-end bottles poured by the glass using a Coravin, a members only wine club, and wine tastings for people of all different levels.

As for the cuisine, Executive Chef and Top Chef alum, Bret Pelaggi, goes the untraditional approach and pairs the food with the wine — not the other way around. Creating interesting dishes like Braised Beef Short Rib with black licorice tea consommé and Octopus “Naranja Agria” that pair perfectly with wines on the menu.

Unlike many other wine-centric restaurants, Uvaggio doesn’t take itself too seriously. Uvaggio’s fun irreverence can be found throughout the restaurant, like its wine list separated by witty titles such as “Full Bodied, Plus Sized Wines” and “Juice Only I Would Drink” and Metallica soundtrack often heard playing in the background.

“Let’s just have fun. At the end of the day there is no ambulance coming if we screw up whatever we’re doing.” Porter adds. “It’s food, it’s booze, it’s wine, isn’t that we like?”
