As part of Canyon Ranch Grill’s “Nourish” prix-fixe menu series and in honor of Father’s Day, the June menu focuses on heart health. Giving locals and residents access to world-class cuisine that help’s address relevant health concerns, the $36/person menu features dishes teeming with antioxidants, fiber, Omega-3 fatty acids, and other anti-inflammatory ingredients that are essential for decreasing risk of heart disease.

On April 30th, many of the area’s best restaurants will donate a percentage of their day’s receipts as participants of Dining Out For Life. Dining Out For Life is a one-day international fundraiser benefiting HIV/AIDS charities in participating cities. This is the fourth year that Dining Out For Life in South Florida will benefit Care Resource.
Care Resource is the area’s oldest and largest HIV/AIDS community service organization. Funds raised through Dining Out For Life will go to support the services Care Resource provides in Miami-Dade and Broward.

Ted Allen Allen is also known as a judge on “Iron Chef America” and “Top Chef” and as the food and wine specialist on Bravo’s “Queer Eye for the Straight Guy”. “Dining Out For Life is a great way to make a meaningful contribution to the fight against AIDS while also supporting the hardworking restaurant community-right in your own backyard,” explains Ted Allen. Like every fundraising event, Dining Out For Life South Florida relies on the help of our volunteers. The most important of these is our “Restaurant Ambassadors.”

As an ambassador you will ask friends, family and co-workers to join you at your designated restaurant. You will also speak with restaurant patrons about the event and Care Resource. Don’t worry! Traning and talking points are provided. The time commitment is minimal, but the satisfaction is great!

This year Lucky Strike Lanes in Miami Beach will host the Ambassador’s Wrap Party. After a hard day’s work as an ambassador you are invited to hang out with your fellow ambassadors and enjoy bowling and munchies compliments of Lucky Strike.

Lola’s Crowns a Beer Champion at the End of The Road to Glory

HOLLYWOOD, Fla. – As basketball fans across the U.S. prepare for March Madness rituals, Lola’s on Harrison is launching its own two-week, double-header event parallel to the NCAA Men’s Basketball tournament. From March 19 – April 6, Lola’s will feature “Beer Madness” — a competition in which 32 craft beers will go head to head for the title of “Best Craft Brew.”

Rules of the Game
Lola’s will host nine game nights on 3/19, 3/20, 3/21, 3/26, 3/27, 3/28, 3/29, 4/4, and 4/6. During each game night, patrons will sample six to eight beers pitted against each other and will vote on the “winning beer.”

Nightly Tastings Feature Haute Cuisine Representing Designers’ Countries

The largest event in the country spotlighting international fashion hits the runways in Miami when designers, entertainers and celebrities from around the globe take part in the 11th annual Miami Fashion Week®, March 19 through March 22. Making its debut at this year’s Miami Fashion Week® is the International Culinary Arts Pavilion — a fashionable feast occurring nightly under the design direction of a different celebrity chef who will create cuisine inspired by the native countries of the fashion designers being showcased that night. Accompanying the tasting menus will be wine pairings by Italian vineyard Casa Vinicola Zonin. The International Culinary Arts Pavilion is being presented by Whole Foods Market, Johnson & Wales University, and A Joy Wallace Catering Production and Design Team.

Thursday night, March 19, Elgin Woodman, Chef de Cuisine, A Joy Wallace Catering Production and Design Team, will be creating a tasting menu featuring native tastes from the Caribbean, including South Florida favorites. A native of Lima, Peru, Chef Woodman received her Bachelor’s degree in Hospitality Management from Florida International University in 1993. In 1997, she joined A Joy Wallace and she was recently a featured chef in a new cookbook titled “Inside the Recipe Box of the Catering Chef.” She was also named as one of three finalists for the International Caterer’s Association’s Chef of the Year for 2008.
Friday, March 20, the International Culinary Arts Pavilion travels to the Dominican Republic and South America with James Beard Award finalist Chef Edgar Leal from Cacao Restaurant. Chef Leal began his career as an apprentice cook under the guidance of Chef Marc Provost at Gazebo Restaurant in his native Caracas, Venezuela. After a series of impressive accomplishments throughout Europe, Chef Leal opened Cacao in Coral Gables in October 2002, with his wife Mariana Montero De Castro, Chef de Cuisine and Patissier of the restaurant. Cacao Restaurant was named Best New Restaurant by Food & Wine, Florida Trend Magazine and The Miami Herald, and Coral Gables’ Most Accomplished Restaurant by Wine Spectator. Chef Leal has been featured by The New York Times, Time Magazine and has appeared on NBC’s “Today Show.” In 2007, Cacao was named one of America’s top 10 restaurants in Miami/South Florida by Zagat’s Restaurant Survey.

Moscow meets the Middle East Saturday night when Tantra’s Executive Chef, Irina Korneeva-Hogle, a Russian native, pays homage to the Miami Fashion Week designers from Dubai, Lebanon, Malaysia and Pakistan. A chess master with a degree in aeronautical engineering, Korneeva-Hogle entered and won a modeling contest in Milan which eventually took her to New York. While there, she refined her palate and her love of food at some of Gotham’s finest eateries. During a trip to Miami in 1998, she met her soon-to-be-husband, Tim Hogle, the owner of Tantra Restaurant. In the decade since, Korneeva-Hogle has hired, supervised, advised and worked side-by-side with the some of the top chefs in Miami, and now holds the Executive Chef position at Tantra Restaurant.

Executive Chef Nate Martin from Andu Restaurant takes over Sunday night with his tasting menu honoring Spain. A native of Dallas, Chef Martin worked under the tutelage of some of the nation’s top chefs in both Dallas and New York before landing at Pearl and Nikki Beach where he was sous chef for three years before moving over to 8½ in The Clinton Hotel as chef de cuisine. With the February 2008 opening of Andú Restaurant & Lounge in downtown Miami’s Brickell area, Chef Martin oversees the kitchen and executes an eclectic menu of Mediterranean cuisine with international influences.
The public is invited to attend the fashion shows and the International Culinary Arts Pavilion tastings, both happening at the Wynwood Art District’s SOHO Studios. SURFSIDE, Fla. – The Budding Cook teaches kids from Aventura to Miami Beach the joy of cooking. Mimi Chacin, mother of two and founder of Surfside-based The Budding Cook, hosts cooking classes for kids from three to 12 by bringing the ingredients, the lessons, the equipment and the fun to their homes.

Chacin combines her passion for cooking with her flair for different cultures to provide a unique and educational activity for parents desperately seeking positive extracurricular outlets for their children.

“Kids are natural cooks because they are curious and have no fear in the kitchen,” said Chacin. “My goal is to channel their curiosity into the kitchen where we can cultivate an awareness of new flavors, cultures and nutrition.”

Born in Spain and raised in Venezuela by well-traveled parents, Chacin learned at a young age to embrace a multitude of cuisines. That is why many Budding Cook classes feature age-appropriate recipes for internationally-inspired dishes ranging from Pad Thai and Greek-inspired lamb meatballs with tomato, feta and olive salad to the more familiar whole wheat waffles with sliced fresh strawberries and maple syrup.

While fostering a greater appreciation of the origins of our food, The Budding Cook classes also reinforce traditional disciplines learned at school like math, reading, science, foreign language and geography, along with important skills like organization, following directions, time management and teamwork. According to Chacin, even the littlest Budding Cooks can benefit from refining their motor skills and improving their vocabulary.

As a culinary school graduate, Chacin understands the importance of kitchen safety. She strives to teach each Budding Cook the basics of proper food handling, food preparation, cooking techniques and presentation.

The excitement sparked by this latest craze for kids is palpable in Surfside, Bay Harbor, Miami Shores and other neighborhoods in Miami-Dade County where classes are in progress. Chacin is looking to the future with plans for summer camps and expansion to new neighborhoods like Coral Gables. She is also enthusiastic about introducing The Budding Cook concept to teenagers and adults as she grows.

Chacin received her B.S. in Mass Communications from Boston University in 1994 and graduated from the Art Institute of Fort Lauderdale’s Culinary Arts Program with high honors in 2005. Before founding The Budding Cook in 2008, she worked in the kitchen of Michy’s, a Miami hot spot for foodies, and served as a resident cooking teacher at Skipping Stones, a local enrichment and activity center for kids.

With the assistance of the Roman “God of Love,” Cupid, Executive Chef Brian Kay and a talented culinary team have created a love-filled, four-course menu inspired by the most romantic region of the world, the Mediterranean.

In keeping with Trina’s Valentine’s tradition, Chef Kay has named each course with a catchy and whimsical phrase to set the tone for love. A popular food color known to stimulate the appetite, Chef Wagner has captured the essence of the most romantic day of the year in a three-course, prix fixe menu with a celebration toast and in an early “lovebirds” special. From 5 to 6:30 p.m. on February 14, Lola’s will offer their red menu for $40.00 per person. After 6:30 p.m., the menu — based on the four steps for the perfect, love-filled evening that represents each course — will be $65.00 per person. Lola’s red Valentine’s menu features:

In a Tribute to Robert Mondavi, Chef Michael Wagner Shares His First James Beard Menu with Patrons of Lola’s on Harrison during January and February

After a successful James Beard dinner in New York City on December 13, Chef Michael Wagner is introducing his “Contemporary American Comfort Dinner” at his downtown Hollywood restaurant, Lola’s on Harrison. The menu is a modified version of Wagner’s Beard House debut, which garnered great critical acclaim.

The four-course, prix-fixe menu features popular selections from the sold-out dinner, inclusive of an amuse bouche, an appetizer, an entrée, and dessert. Patrons may choose between a $35 food-only menu or a $55 food and wine pairing, featuring a selection of perfectly paired Robert Mondavi wines. The menus will be available January 15 through February 28, exclusive of Valentine’s Day.

Wagner was discovered by James Beard House representatives last year, and although only being open for less than a year, received the invitation to prepare a dinner at the famous Chelsea brownstone. At age 35, Wagner is among Florida’s youngest chefs to receive this honorable invite.

“I was truly honored to receive the invitation. It was exciting to have an opportunity to not only prepare this dinner in the most prestigious American culinary institution, but to be able to return and cook in my hometown of New York. I am introducing this winter-theme menu to South Florida to share with all our guests who could not make the trip to dine with us at the Beard House.”

Staying true to his signature cuisine, Wagner paired American comfort favorites with exclusive Mondavi wines in a tribute to both American icons James Beard and the late Mr. Mondavi. The Lola’s version of the James Beard experience begins with an amuse bouche of Boston Diver Scallops wrapped with crispy applewood smoked bacon, fresh mango and drizzled with an apricot-mango glaze. Next, Chef Wagner has paired a creamy Roasted Chestnut Soup with the Robert Mondavi Chardonnay Reserve 2006. The main course, New Zealand Lamb Chops topped with a fennel marmalade and citrus-mint yogurt sauce, finds harmony with the Robert Mondavi Merlot 2005. For a sweet ending, indulge in the Naples Concord Grape Pie with peanut butter ice cream and the Robert Mondavi Moscato D’Oro 2006.

The National Turkey Federation (NTF) has named South Florida’s Michael Wagner, chef and owner of Lola’s on Harrison, as one of three “Turkey Trendsetters” for 2008. Chef Wagner’s Pan Roasted Turkey Tenderloins recipe garnished with festive side dishes is available on the popular “Turkey Trendsetter” feature at EatTurkey.com.

“The dish is a play on the flavor profiles you would expect at the holiday table, which is very comforting for our guests. The tenderloin product is underused in South Florida so when our guests see it on the menu served with cherry gravy, it peaks their interest,” said Chef Wagner.
