Sebastien Verrier joined the Biltmore team in the fall of 1999 where he oversee the wine lists at La Palme d’Or and the 1200 Restaurant & Courtyard, as well as wine pairings for all the hotel’s winemaker-theme dinners. After 12 years at the Biltmore, he became a partner of W Wine Boutique in January 2011. He is now sommelier at Vita by Baoli.

At 34, Paris born Sébastien Verrier is often younger than some of the wines he serves. However, his youth has not prevented him from garnering a stellar reputation as a sommelier, one who relishes in the “always learning, always tasting, always working on the palate” associated with his profession. It is a profession he entered when he was only 15 as a sommelier’s assistant at Paris’s Michelin-starred Les Clos Longchamps. Verrier balanced his duties there with earning a bachelor degree in wine stewardship. Having begun to master wine, he became equally determined to learn English, so after two years as second sommelier at the famed Michelin one-star Le Jardin in Paris, he headed for London and a position as captain/sommelier at Mon Plaisir Restaurant.

Wanderlust, which often accompanies wine expertise because of its global nature, had set in by 1998. Verrier set his sights on New York City, where he spent a year as a captain at Les Trois Jeans before taking off for Australia and an exploration of its viniculture before landing definitely in Miami

Photographs of Dogma Grill New Menu Tasting on 7/26/11

Dogma Grill New Menu Tasting on Tuesday, July 26, 2011.  During this tasting we got to taste around 10 different menu items and all of them delicious.   I think my favorite was the bratwurst with of course sauerkraut and brown mustard, so yummy.  Then in close second was the chicago dog with yellow mustard, neon relish, chopped onions, chopped tomatoes, sport peppers (these do have a big bite to them, but really good), and a pickle spear.  There was a tie for third between the Cheese Steak Hoagie, The Roast Beef Po’ Boy (the au juice they serve with this is so YUMMY), the Fried Oyster Po’ Boy, the Fried Shrimp Po’ Boy, Chili Dog and all of the rest that I tried.  OH, they make there own Dogma Potato Chips and they are just awesome, the seasoning they put on them is so good.  So you should go by Dogma and try some items off of their new menu, you will not be disappointed.  I want to go back and eat more :-).

United Way Miami Wine and Food Festival launches Bacardi’s 60 Second Cocktails, a monthly series By Betty Alvarez

In April, the United Way Miami Wine & Food Festival experienced record-breaking ticket sales and sold out events. To meet popular demand, the festival launched a series of year-round wine and food events – all for a good cause. 60 Second Cocktails with Bacardi is the kick-off event marking the expansion, and all proceeds benefited United Way of Miami-Dade’s work in education, financial stability and health.

On June 16, guests brushed up on their bartending skills and learned how to make delicious cocktails, with help from Bacardi mixologist and Miami-native, Gabe Urrutia who is an expert in the cocktail trend of molecular mixology. He taught guests how to make a balanced cocktail from a blend of unique ingredients in just 60 seconds.

A Bacardi Bar cocktail reception followed where guests enjoyed cocktails, appetizers, music, a special gift and exclusive entry to the private Emilio Bacardi Company Museum, not open to the general public. The museum showcases historical photos and memorabilia dating back to the 1860s, a recount of the company’s evolution, how Bacardi adopted its world famous “Bat” trademark, and much more.

Photographs of the Martin Miller Gin Crawl on South Beach on 5/7/11

Martin Miller Gin Crawl on South Beach on Saturday, May 7, 2011.  We meet at the Raleigh Hotel Bar and had four amazing gin cocktails and then we moved on to Eden Restaurant and some two gin cocktails paired with some amazing food made for us.  Our last stop was at Waxy’s South Beach which we had three different gin cocktails.  I have to say I normally don’t care for gin but some of these cocktails we had during this crawl has made me a gin fan.  The Donatello at the Raleigh was my favorite, made with fresh blueberries, raspberries, orange , lemon and Martin Miller Gin, it was amazing.

Tanteo Naturally-Infused Artisan Tequilas

“What are your thoughts on 80-proof, choco-infused tequila with hints of jalapeno? That it’s ass water? We were right there with you-until we maned up and took a slug. Awesome! Sweet, spicy and chocolaty good. It confirms the Tijuana truism that cocoa and tequila always mix well.”
Maxim Magazine September 2010

Tanteo tequila takes pure blanco tequila from 100% Weber blue agave and then infuses it with jalapeno, chocolate or tropical fruit extracts.

o Tanteo Jalapeno Tequila $44.99
o Tanteo Chocolate Tequila $44.99
o Tanteo Tropical Tequila $44.99

Flavored tequila was previously prohibited by the CRT, but in 2006 the rules surrounding the infusion of tequilas with various flavors was relaxed allowing for the production of these drinks. The fact that the CRT have relaxed their laws shouldn’t be indication that people can do what the hell they want with tequila, and Tanteo takes a great first step and the results are a high quality product that is both delicious and still respects the tequila in the process.

Please join us this Saturday April 16th from 2-5 pm at our South Beach location, 1328 Alton Road, for a celebration of modern invention and traditional artisan methods. And of course, to drink some Tequila!
