A fall launch has been cooking! As restaurants continue to adapt to these new “normal” times, some restaurants and chefs have taken the initiative and have decided to collaborate with small businesses to keep thriving through the pandemic. Chef Oscar del Rivero, owner and executive Chef at Jaguar Restaurant thought it would be a great idea to partner up with Juan Rozo, creator of the pop-up pizzeria, Luna Rossa Cucina Rustica. These new times have brought together restaurants and small businesses, making this new world we live in more about collaboration and less about competition.

The partnership between Jaguar Restaurant and Luna Rossa Cucina Rustina came upon after one very successful Jaguar LAB Live Stream where Juan Rozo was invited as a guest. The connection between both chefs instantly sparked and the possibility of collaborating was brought up. The concept of joining forces leaned mostly on becoming stronger together to keep their businesses and communities healthy, safe, all while having some fun in the kitchen.

After losing his corporate job, Juan Rozo decided to invest his stimulus check in an Italian stone pizza oven. Thanks to his experience working with pizza in the past, Rozo has now mastered the art of pizza with handmade dough that ferments for 12 hours.

Beginning on Sunday, October 18th, guests will be able to savor in delicious and unique pizzas from 12 pm to 8 pm. The Signature Pizzas that will be available for guests will be “Jaguar Pizza”, a Mexican pizza with the following ingredients: Jaguar’s salsa, parmesan cheese, red onions, merkel sauce, pumpkin seeds and cilantro prepared with yummy Cochinita Pibil made by Chef Oscar Del Rivero; as well as the “Queen Pizza”, better known as the Classic Margarita, Juan Rozo’s style. Mexican and pizza are both traditional comfort food in the U.S. What better way to enjoy these flavors than with the combination of these two which are loved by many of us at Jaguar’s outdoor terrace which they call their Mini-Jungle or their in-room dining space as well as takeout and delivery via DoorDash and UberEats.
