Two Miami culinary icons are joining forces for an exciting limited-time collaboration celebrating the vibrant culture of magic city. From March 5th through the end of the month, South Florida’s trendy taqueria, COYO Taco is teaming up with Little Havana’s esteemed cocktail bar and restaurant Café La Trova, ranked among the ‘World’s 50 Best Bars.
COYO Taco’s bar team is working alongside famed bartender and Maestro Cantinero Julio Cabrera of Cafe La Trova for a special edition cocktail. All COYO Taco locations are pouring up a riff on Cafe La Trova’s signature cocktail, El Guayabero ($12). The frozen libation features a reimagined twist delivering tropical island flavors and some heat blended with Tequila Reposado, Guava Nectar, homemade picante syrup and fresh lime juice. The limited collaboration blends Café La Trova’s Cuban cocktail heritage with COYO Taco’s energetic, street-style atmosphere creating a drink that captures the spirit of Miami in every sip.
Cafe La Trova is also bringing the beloved taqueria’s signature tacos to the heart of Calle Ocho. Guests can enjoy a curated selection of COYO Taco’s fan-favorite menu items paired with their award-winning cocktails and festive Cuban-inspired atmosphere. Kicking off March 10th, select tacos will be available every Tuesday throughout the month.
In spirit of the collaboration, COYO Taco will host a special kickoff celebration on March 5th from 6–9 PM at their Coral Gables speakeasy.
The event will feature:
• A guest bartender from Café La Trova behind the bar
• Complimentary sips of frozen El Guayaberos
• A live DJ set
The frozen El Guayabero will be available at all COYO Taco locations from March 5th until the end of the month with the March 5 kickoff party setting the tone for a citywide toast to Miami. Special COYO Tacos will be available at Cafe La Trova every Tuesday in March beginning March 10.
