Solé on the Ocean is throwing a Reggae Beach Bowl concert on the sand this Saturday, April 13, from 2 to 9 p.m. NFL greats Antonio Brown and Amhad Bradshaw will join Miami Dolphins Lamar Miller and Olivier Vernon in hosting the beach bash with a live performance by Junior Marvin & One Love of Bob Marley & The Wailers.

Executive Chef Ralph Pagano of Alba Seaside Italian will be cooking up island favorites such as jerk chicken and pork while guests sip on rum punch and enjoy Heineken and Amstel beer specials.

Executive Chef Chris Wong is inviting guests to an eastern experience by studying the art of the roll and the art of the cocktail. His new Monday night dinner party at Kitchen 305 gives patrons a front row seat into the world of exotic sushi rolling followed by a mixology session, three course dinner and sake-tini pairing for $35.

Patrons will watch Chef Wong wield a rolling mat and make several different sushi rolls to sample, each increasing in both complexity and decadence.

The wet rice wisdom is followed by a mixology lesson on easy-to-master, signature Sake-tinis. After working up a hunger, patrons will be treated to an artful dinner starting with a savory miso soup or fresh garden salad with sweet ginger dressing, Asian inspired entrée or tasting menu of the chef’s most popular rolls and dessert.

Chef Ralph Pagano — you’ve seen him battle Bobby Flay on “Iron Chef America,” Gordon Ramsey on “Hell’s Kitchen” & even as the host of “Pressure Cook” on the Travel Channel and Lifetime TV’s “All Mixed Up” — and now you can find him in his newest home — Alba Seaside Italian in Sunny Isles. Alba, the destination for Savor Tonight’s next Miami area happy hour event is located at Sole on the Ocean and offers gorgeous views of the Atlantic, thanks to the floor-to-ceiling windows. Pagano has created a menu that he coins “vacation cuisine.” Expect a blend of international flavors with Italian style and classic French technique focusing on fresh seafood and pasta.

Kitchen 305 is setting the mood this Valentine’s Day with a delectable three-course menu for two and bottle of champagne for $100. Executive Chef Chris Wong has prepared a romantic dinner to be served starting at 5p.m. on Thursday, Feb. 14th.

Savor a choice of starters such as Caesar Salad, hearts of romaine hand tossed in a homemade Caesar dressing with grated Parmigiano-Reggiano cheese and hearty homemade croutons; Balsamic Portobello Mushroom Salad, mixed greens topped with sundried tomatoes, Asian pear, fire roasted red peppers, candied walnuts, Portobello mushrooms and gorgonzola served with balsamic vinaigrette dressing or Maryland Crab Bisque, topped with a dollop of double whipped crème fraiche and chives.

Entree options include Grilled 14-oz Ribeye Steak, with oven roasted, garlic au gratin potatoes and sundried tomatoes with haricot verts in a rosemary soy reduction; Veal Milanese, lightly dredged bone in veal cutlets with warm watercress and cherry tomatoes served with spaetzle and veal au jus for dipping or Atlantic Salmon Stuffed with Maryland Crab, accompanied with wasabi red bliss mashed potatoes and baby carrots in a lemon dill butter sauce.

Desserts made for sharing include a Mini Granny Smith Apple Pie Alamode with a Tahitian vanilla ice cream; Molten Chocolate Lava Cake with cherry jubilee or 305’s Sweetheart Sundae, vanilla bean ice cream topped with chocolate sandwich cookie crumbles, fresh strawberries and whipped cream garnished with a white chocolate stick.

The newly opened Alba Seaside Italian restaurant, located at Sole on the Ocean hotel at 17315 Collins Ave. in Sunny Isles Beach, is launching its first-of-many WTF (Wine – Travel – Food) weekly dinner parties on Thursday, Feb. 7 at 7 to 10 p.m.

The culinary journey is inspired by Pagano’s love for everything travel and food and will feature an endless Italian feast. For $35, guests will enjoy a family-style Alba tasting menu including pasta, fish and meat. Pagano will continue bringing you food until you tell him to stop. And for just $15, guests can pair this feast with non-stop wines by the glass – as long as you’re eating, you’re drinking, too.

And Pagano will still be offering his popular “The Vinny D Split” concept. Based on Ralph’s belief that “a little gamble goes a long way,” every table gets to play. At the end of the meal, before the check is presented, a bingo wheel with balls numbered 1 through 100 is brought to the table. The guests pick one number and the tumbler is spun. If the first ball pulled from the tumbler matches the one picked by the guest at the table, the entire check – food, drink and wine included – is on the house.
