This year’s South Beach and Wine Festival Graspa Group brings risotto connoisseur Gabriele Ferron to TiramesU on Lincoln Road Wednesday February 22nd and to Salumeria 104 in Midtown on Thursday February 23rd at 6pm for a tasting of authentic Italian risotto paired with Winebow wines. The complimentary events are a preview of what will be showcased at the Winebow tent during SBWFF weekend.

The risotto tastings at TiramesU and at Salumeria 104, presented by Gabriele Ferron, will be set up as a cooking demonstration. Mr. Ferron will prepare each risotto while explaining how it’s grown, where it comes from, how to best prepare it, the different types and much more. Gabriele Ferron was born in Italy and is passionate of Veneto regional cuisine (Venice region). He has run several restaurants but now mostly dedicates his time to the promotion of Vialone Nano Veronese Rice and is often referred to as the “Ambassador of Rice to the World”. The area where the risotto is grown obtained the I.P.G. (Protected Geographical indication) appellation by the European Community, the highest official recognition awarded in the industry.

Each risotto will be paired with a wine. Featured Winebow wines include Zenato (Pinot Griggio), Tasca Bianca (a blend of white grapes: Inzolia, Grecanico and Catarratto), Di Majo (Sangiovese), Polo Rubio (Sangiovese Grosso) and Tasca Rosso (Nero d’Avola).

Salumeria 104 embraces the Italian tradition of “neighborhood joint” where one can lunch or dine on homemade pastas and authentic regional dishes, have a glass of wine with delicious cured meats after work as well as pick up dinner. www.salumeria104.com
