Michelin-starred Chef Michael Psilakis and restaurateur Donatella Arpaia, co-founders and creators of eos in Miami and Kefi restaurant in Manhattan, are launching a new concept for fast, inspired and affordable downtown breakfast and lunch, aptly named bistro e.

The restaurant, residing in the same 15th floor space of Viceroy Miami as its nightly counterpart eos – the yin to bistro e’s yang, maintains Chef Psilakis’s dedication to local seasonal ingredients while lowering prices and speeding up service. With menu options, such as e | appetizers, e | main courses, e | specials and e | snacks starting at $5, bistro e is the go-to spot for Brickell power meetings and social experiences, priced for frequency and affordability starting July 12. There will be a different e³ | daily special, featuring three-course meal selections for “$15 on 15th” including a pint of beer. . Speedy service will be ensured with the presentation of an hourglass on the table upon arrival, so all staff will be aware and lunch guests can get in and out within 60 minutes, if requested.

The cooking style for bistro e is what Chef Psilakis affectionately refers to as “First Generation American Cuisine,” a melting pot of foreign dishes fused with American favorites. The menu, uniquely similar to the cultural blends of Miami residents, delivers a farm-to-table approach with ingredients hand-picked at their ripest and ready to serve. Each dish is thoughtfully composed, showcasing the chef’s exceptional talent for balancing flavors.

Breakfast offerings, ideal for the time-pressed yet discriminating executive or traveler, includes cast-iron frittatas, country fried breakfast and grab-and-go favorites like mouth-watering danishes, muffins and croissants; seasonal fruits; freshly squeezed juices; and an assortment of organic teas and a signature whipped café con leche.

Lunch guests indulge in a wide variety of appetizers and snacks ($5 – 10) including grilled San Marzano tomato, mozzarella and basil pizza and Chef Michael’s one of a kind guacamole; sandwiches, salads and burgers ($14 – 18), such as the e Burger with mushrooms, gruyere and bacon and egg optional served on a brioche bun and brisket French dip with gruyere, caramelized onions and garlic with dipping jus; and main dishes or specials ($13 – 22) including Linguine with Clams in garlic white wine sauce and Hanger Steak with crispy potatoes and charred tomatoes.

Recognized for bringing Greek cuisine to the modern culinary stage at three Manhattan restaurants, Chef Psilakis has earned many culinary and hospitality awards. He was named “Best New Chef” by Food & Wine (2008) and “Chef of the Year” by both Bon Appétit (2008) and Esquire (2007). Psilakis is currently a judge on The Food Network’s hit reality show, Ultimate Recipe Showdown. Donatella has been featured on NBC’s Today Show, Bravo’s Top Chef, and the Food Network’s Iron Chef America, and profiled as the 31st “Most Powerful Woman” in Manhattan by The New York Post.
